Choc-Cookie Protein Muffins

This was a late night recipe thrown together with a few substituted ingredients but the end product tasted pretty good! Perfect for a sweet treat ;) 

INGREDIENTS:
2 Medium Eggs
200g Light Brown Soft Unrefined Cane Sugar
250ml 0% Greek Yogurt and Water (2/3 Yogurt and 1/3 Water)
125ml Almond Oil
290g Wholemeal Self-Raising Flour
110g Premium Peptide Probiotic - Choc-Cookie 
1tsp Baking Powder

 

DIRECTIONS: Preheat oven to 190C and line your muffin tray with paper muffin cases.
Beat the eggs in a mixing bowl and then mix in the oil, yogurt and water. Add the sugar and whisk until disolved.
Sift in the dry ingrediants flour, baking powder and protein powder - add extra water if the mixture is too dry!
Fill muffin cases two thirds full and bake in the middle of the oven for 20-25 minutes.

This recipe makes 12 muffins...ENJOY!
